Sloppy Bulgur Sandwiches

Don’t let the “unattractive” name of these sandwiches fool you! These sandwiches are absolutely delicious and quite nutritious as well! Serve these up to the family (vegans and non-vegans alike), and they are sure to be a new family favorite. Don’t forget to add some steamed kale to go along with them! Enjoy!

 

 

 

 

Ingredients:

1 ¾ cups water

1 cup bulgur

1 tbsp. olive oil

1 small red onion

½ red bell pepper

1 (14.5 oz.) can crushed tomatoes

1 tbsp. sugar

1 tbsp. spicy brown mustard

2 tsp. soy sauce

1 tsp. chili powder

4 whole wheat sandwich rolls

 

Directions:

In a large saucepan, bring the water to a boil. Stir in the bulgur wheat and lightly salt the water. Cover, remove from heat and set aside until the bulgur softens and all of the water is absorbed (about 20 minutes).

In a large skillet, heat the oil. Add the onion and bell pepper. Cook until soft. Stir in the tomatoes, sugar, mustard, soy sauce, chili powder, and salt and pepper to taste. Simmer for 10 minutes, stirring frequently.

Spoon the bulgur mixture onto the buns/rolls, and serve warm.

 

Makes 4 large sandwiches
