These brownies are sooo yummy, but you have to make sure as not to over-bake them. These brownies are scrumptious and may not be around too long as you’ll want to eat them all at one sitting.
Ingredients
6 oz unsweetened bakers chocolate (melted)
½ cup vegan butter (I use Earth Balance)
1 cup vegan sugar
2 Tbsps. cocoa powder
Ener-G egg replacer (equivalent of 3 eggs)
2 tsp. vanilla extract
¾ cup all-purpose flour
¼ tsp. salt
Directions
Preheat oven to 350 degrees
Lightly oil an 8 x8 inch square baking pan
After melting the chocolate either in the microwave (which I do) or on the stove in a double-boiler, mix in the sugar, the cocoa, vanilla and the egg replacer in a large bowl
Add the flour and the salt to the chocolate mixture and blend well, there will be some lumps
Spread the mixture into the 8 x 8 inch baking pan
Bake for 30 minutes, checking often as not to overbake…if a toothpick comes out with some brownie stuck to it, they are done; if the toothpick is clean, the brownies are overdone
Allow to cool completely before slicing
Makes 15 brownies
