This is a delicious and healthy pizza. The hummus replaces the vegan cheese, adding a unique yet tangy twist on the “traditional” pizza.
Ingredients
1 ½ cups of prepared plain hummus
2 garlic cloves finely chopped
1 package refrigerated pizza dough
½ cup sun-dried tomatoes (drained)
1 Tbsp. marinade reserve from the sun-dried tomatoes
8 pitted kalamata olives, halved (add more olives if you’d like)
Directions
Preheat oven to 350 degrees
Lightly oil a baking sheet and set aside
In a small bowl mix together the hummus and garlic until blended. Set this aside.
Unroll the pizza dough onto the baking sheet and press to fit (without tearing the dough)
Brush the reserved sun-dried marinade evenly over the dough, then prick the dough a few times with a fork (this will prevent the pizza dough from forming a “tent” in the center)
Bake the dough for 12-15 minutes, until lightly browned
Remove from oven and spread evenly with the hummus mixture
Top with the sun-dried tomatoes and olives
Continue baking for 5-7 minutes, until the edges of the crust are brown
Cut into wedges and serve immediately
