I just love blueberries and any opportunity that I have to make anything with them I do. This is one of the best vegan blueberry muffins that I have tried and made. Enjoy these on a lazy Sunday morning with a cup of coffee or a big glass of soy milk!
Ingredients:
- 1/4 cup soy margarine ( I use Earth Balance)
- 1/2 cup unsweetened applesauce
- 1/2 tsp. salt
- 1 cup granulated sugar ( I use Florida Crystals)
- 2 cups all-purpose flour
- 1 Tbs. baking powder
- 1 tsp. vanilla extract
- 1/2 cup soymilk
- 2 cups fresh blueberries ( frozen work well here too)
Directions
- Preheat oven to 350F. Line 1/3-cup muffin cups with paper liners, or spray with cooking spray.
- Mix all ingredients together in mixing bowl. Spoon into muffin cups, filling three-quarters full.
- Bake 35 minutes, or until tops are firm. Cool slightly on rack.
