Blueberry Muffins

I just love blueberries and any opportunity that I have to make anything with them I do. This is one of the best vegan blueberry muffins that I have tried and made. Enjoy these on a lazy Sunday morning with a cup of coffee or a big glass of soy milk!

 

 

 

Ingredients:

  • 1/4 cup soy margarine ( I use Earth Balance)
  • 1/2 cup unsweetened applesauce
  • 1/2 tsp. salt
  • 1 cup granulated sugar ( I use Florida Crystals)
  • 2 cups all-purpose flour
  • 1 Tbs. baking powder
  • 1 tsp. vanilla extract
  • 1/2 cup soymilk
  • 2 cups fresh blueberries ( frozen work well here too)

Directions

  1. Preheat oven to 350F. Line 1/3-cup muffin cups with paper liners, or spray with cooking spray.
  2. Mix all ingredients together in mixing bowl. Spoon into muffin cups, filling three-quarters full.
  3. Bake 35 minutes, or until tops are firm. Cool slightly on rack.

Makes 12 muffins
